Baking in the winter has its perks. For starters, I don't have air conditioning so in the summer, buttercream can become a bit of a challenge in an 85 degree kitchen. Cream cheese icing is also much easier to work with in a cooler kitchen. Today's carrot cake cupcakes turned out beautifully with crisp cream cheese icing.
I love when the icing is stiff enough to create a realistic petal effect. I am quickly learning it has a lot to do with the temperature of the icing and how warm my kitchen is. I am already thinking of ways to keep cooler this summer!
These cupcakes are some of my favorite.
Carrot cake and cream cheese frosting. All from scratch. Hand washed, peeled, and shredded carrots. It doesn't get much better than that.
