Brain Cupcakes and Pumpkin Halloween Cookies

Happy Halloween!  This year I decided to make a few special treats for a Halloween Party we went to.  A batch of spooky brain cupcakes and peanut butter cookies with candy pumpkins!  Keep reading for the peanut butter cookie recipe below!

I made a classic peanut butter cookie recipe and switched out the chocolate hershey kisses for candy corn pumpkins.  They were actually really yummy, though I prefer to eat them separately.

I baked a vanilla poundcake cupcake with swiss buttercream frosting.  So much delicious butter!

These were a super quick and easy snack to bring to a party and who doesn't like a cookie?

I used a round pastry tip to pipe the brain pattern and I just kind of went for it.  I think they look creepy and brainy, perfect for the spookiest holiday.  Happy Halloween and enjoy the cookie recipe!

High Altitude Peanut Butter Cookies

1/2 cup sugar
1/2 cup brown sugar
1 stick butter
1 cup peanut butter
1 egg
1 tsp. vanilla
1 1/4 cup all purpose flour
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt

(for recipes at sea level, adjust baking soda to 1/2 tsp. and baking powder to 1/2 tsp.)

-Cream together sugars and peanut butter and butter until creamed well.  Add in vanilla and 1 egg, mix until combined.  Add the dry ingredients and mix until the dough comes together.  

Bake 8-12 minutes at 350 degrees (depending on cookie size- I made minis so it only took 8 minutes)
