Smores Cookies

These are the perfect summertime cookie!  So chewy and decadent.  Did I mention they are great to share?





Tell me you can resist burnt marshmallowy cookies?  I can practically smell the campfire!



Bonus: These are half the mess of gooey smores by the campfire.


INGREDIENTS:
yield: about 30 cookies
{adapted from savorysweetlife recipe}

 1 cup unsalted butter at room temperature
1/2 cup granulated sugar
1 1/2 cups brown sugar
2 eggs
2 tsp. vanilla extract
2 3/4 cups all purpose flour
1/2 tsp. salt
1 tsp. baking soda
1 1/2 tsp. baking powder
2 cups chocolate chips
1/4 - 1/2 cup mini marshmallows

1. Cream butter, granulated sugar, and brown sugar until light and fluffy.  

2. Add eggs one at a time with vanilla and mix to combine, beat 2 minutes until fluffy again.

3. Add flour, salt, baking soda, and baking powder and mix until combined.

4. Add chocolate chips and marshmallows and mix until combined.

5. Bake 11-12 minutes at 360 F or until edges are browned and cookies look done.  They will continue to brown a little while they cool on the cookie sheet.
