Pumpkin Spice Cupcakes

In honor of Thanksgiving, I made some pumpkin spice cupcakes topped with cream cheese frosting. They were going to be cinnamon sugar cream cheese frosted but hey, life happened and I somehow ran out of cinnamon before I could make the frosting.  These are still delicious but I can't help but wonder if they would have been insanely amazing with the cinnamon.

Flourless Chocolate Cake

I am adding a new cake to my menu.  The often requested flourless chocolate cake.  The great thing about this cake is it is so versatile.  Serve it at a dinner party when one of your guests has a gluten allergy, serve it to chocolate lovers, or eat it by yourself during the week for breakfast because it keeps really well in the fridge.  The last one is my personal favorite.


It is great served with fresh fruit, vanilla ice cream, or powdered sugar.

She wanted half chocolate and half vanilla.  Always a good idea when you have a big group of people because believe it or not, there are people out there that don't like chocolate.

High Altitude Banana Bread Recipe

This week I made some banana bread to take to a play date and my little helper got to hang out and taste test.  He loves to be in the kitchen and most of my baking is done with him on my hip.


He helped me measure the ingredients, nodding and jibber jabbing away when I asked him what went where.  Then he helped me stir it all up.  This banana bread calls for 3 bananas in each loaf and it tastes fully loaded and delicious.

Brownies.  There are so many ways to make them.  You can make them cakey, fudgy, nutty, plain jane, or full of dried cherries, candy bars, caramel, etc.  I pretty much like them hot on ice cream, but for these brownies I will make the exception.


When you bite into these brownies you forget about your worries.  All you can think about is chocolate.

High Altitude Lemon Bars

I love lemon bars!  Who doesn't though, right?  They are always a hit at every party and my husband's favorite sweet.  Woo hoo for summer and fresh juicy lemons.


You don't have to make many changes to this recipe to make it work for high altitude, but reducing the baking powder in the filling helps keep it from rising and falling too quickly and leaving you with a flat top.

Is there a difference between baking at high altitude and at sea level?  Do I need to adjust my bread recipes when I move to the Rockies?  What kind of problems might I face in the kitchen moving from Hawaii to Colorado?  These are questions you might find yourself wondering in your kitchen, I know I did!


My favorite cupcakes are often from boxed cake mixes.  I always make my own frosting, but I often cheat a little a use a box mix for cupcakes because I like them.  I do. So I wondered, can you use mixes with the same results at high altitude?   You can!  Here are the tweaks that I made.
