Chocolate Chip Peanut Butter Oatmeal Cookies

 When I first moved to Tucson, I worked at an all inclusive health resort.  We had a fairly small dessert menu, but we did serve two types of cookies daily.  This is when my love of cookies began.  I used to be a chocolate mousse, chocolate cake, complex dessert girl all the way.  I pretty much ignored the cookie.  It took a year of nothing BUT cookies to get me to take a long hard look at what I had been missing.  

These little handheld treats are not to be underestimated.  I am in love.  Cookie LOVE.

Here is a recipe I made this week for my husband.  We both loved it.  His request, my mission, and probably a few pounds heavier on both sides.

You read that correctly.  These are a triple whammy, chocolate chip + peanut butter + oatmeal.  {All in one cookie.}  They are delicious.  Want to make them?  You should.  They are fast and easy and can be made in 30 minutes including baking time.  If you are really good, you could include clean up while you bake and forget you ever made a mess in the kitchen.


1/2 cup unsalted butter
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/3 cup brown sugar
1 egg
1/2 tsp. vanilla extract
1 cup all purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/2 cup rolled oats
1 cup semisweet chocolate chips

DIRECTIONS: preheat oven to 350 
Yield: 16 cookies 

1. Cream butter, peanut butter, granulated sugar, & brown sugar.

2. Add egg and vanilla and mix to combine.

3. Add flour, baking soda, and salt and mix until just combined.

4. Fold in oats and chocolate chips.

5. Bake at 350 degrees for 9-11 minutes or until the edges are lightly brown.  

6. ENJOY!  These will last a few days in an airtight container, but you will probably eat them all in a day.
